Install e-mail server and enable using PHP

I am currently developing a web site on an Apache server running under Ubuntu Linux v. 18.04, housed on my Dell desktop PC. I am in need of some help installing and configuring an e-mail server to use with this web site.
These are my specific needs:
1. One-on-one hands-on instruction in how to install an e-mail server. Based on research I have done, I am expecting to use Postfix as the server software, but I am open to suggestions if you think I can do better.
2. Written documentation of the locations (file paths) of all files used by the e-mail server.
3. Written documentation of all the e-mail server’s configuration options, advice on the best choices of options for my situation, and instruction in how to set these configurations.
4. Instruction/assistance in writing PHP code to utilize the e-mail server for such functions as new user confirmation and password reset, using the PHPMailer function library.
Notice that my requirements imply that I am looking for someone local to the Dallas-Fort Worth area. I am not interested in doing this remotely or virtually. We can meet at my home office, but I would prefer to bring the subject computer (it is small and easily portable) to you.
