Arrangement (including vocal) of 'You Raise Me Up' in Slow Waltz Rhythm

My daughter’s wedding is in February and she would like us to do a father-daughter dance. We have chosen the song ‘You Raise Me Up,’ but need it arranged in a slow English waltz style, at approximately 29 bpm, in C major. The arrangement should use a piano or string accompaniment with a classic waltz pattern, keeping the vocal line mostly unchanged but adapting phrases if necessary to fit the 3/4 time signature. We have included example chord progressions and style ideas, but I am not musical myself and rely on your expertise to guide us. We prefer a young female vocalist and would like to keep the arrangement around 2 minutes. We need this ready before November 12th to start dance rehearsals. I’ve uploaded example tracks for reference. This is a personal project, and all work can be done remotely.
